- Add the garlic, ginger and chicken chunks to the stock and bring to the boil.
- Once fully boiling, reduce the heat and partially cover. Leave to simmer for 25 minutes.
- Add the mushrooms, spring onions, sweetcorn, noodles, soy sauce, chillies, mint and basil. Stir thoroughly for 2 minutes and then let simmer for 5 more minutes.
- Serve and enjoy! Highly recommend a side of prawn crackers !
