  4. Put into food processor and process until smooth
  5. Place back into pot and add coconut milk. Heat gently until hot
  6. Serve with finely chopped cilantro and lime juice

Add curry powder and mix to bring out its flavour. Add rinsed and drained lentils, broth and tomatoes. This spicy vegetable soup is super low in fat and calories. Serve with a dollop of cooling yogurt and fresh coriander. Warm over medium heat, stirring, until heated through.
