  16. Take Maggi cube (curry) - 2
  17. Take Salt
  18. Prepare Sugar

Add the shallots, chili paste, fish sauce and lime juice. In a medium saucepan, bring the vegetable broth to a boil. Add the mushrooms, thin soy sauce, Thai chiles, lime. The Tom Yum soup base is very crucial and it's the soul of the whole dish.

Instructions to make Tom Yum Soup:
  1. Use a meat mallet or the side of a knife to smash the lemongrass, kaffir lime leaves, onion and garlic. (Kp aside)
  2. Grind/blend dried chilli & thai chilli into thick paste. (Kp aside)
  3. Add oil into a pot. Add smashed ingredients followed by the chilli pastes. Stir well and add water. Simmer for 5-10 minutes, until the broth smells fresh and fragrant.
  4. Add in the carrot, cauliflower, mushrooms, shrimp, chicken fillet and fish sauce. Simmer just long enough for the chicken and shrimp to cook.
  5. Add in the lime juice, maggi cubes, sugar and salt. Stir well. Cook for 5 more minutes. Serve hot.

Add the mushrooms, thin soy sauce, Thai chiles, lime. The Tom Yum soup base is very crucial and it's the soul of the whole dish. The soup tastes hot and sour with lots of fragrant spices and herbs.
